

6 Layered Soba Noodle Jar Recipe

INGREDIENTS
Layer 1 (Bottom layer)
2 tbsp peanut butter
Juice of a lemon
1 red Thai chilli, finely chopped
2 cloves of garlic, grated
1 tsp soy sauce
1 tsp honey
Salt and pepper to taste
Layer 2
1/4 red bell pepper
1/4 yellow bell pepper
Layer 3
1/4 green zucchini, sliced
1/4 yellow zucchini, sliced
Pinch of dried oregano
1 tsp smoked paprika
Salt and pepper to taste
Layer 4
Soba noodles
Water to boil
Layer 5 & 6
Lettuce leaves
1 boiled egg
METHOD
For layer 1
- Combine all the ingredients in a bowl and whisk together.
- Add a little water to thin down the consistency if you like. Keep it aside for later.
For layer 2
- Sliced red and yellow peppers.
For layer 3
- Toss the sliced zucchini is all the ingredients. Heat oil in a grill pan and cook them on high flame until grill marks appear.
- Turn over and cook for another 2-3 minutes. Make sure the zucchini is cooked through.
For layer 4
- Cook soba noodles according to package instructions.
- Tt takes 10-12 minutes of boiling in water to get perfectly cooked soba noodles.
For layer 5 & 6
- Break up the lettuce and keep it ready
- Cut the boiled egg in four
To assemble
- Pack all the ingredients, layer by layer, tightly in a jar to carry around.
- While eating empty the jar content on a plate or salad bowl, drizzle the dressing and give it a good mix before eating.
