Basa En Papillote Recipe

INGREDIENTS


<li>In a blender, blitz  cilantro, green onion and 1 tablespoon of olive oil with a pinch of salt. Blend it until smooth and keep it aside. Trim the sides off the basa fillets to make a neat rectangle shape out of it. Pat dry with a paper towel and set it aside.</li><li>In a pan, add butter and a little bit of oil. Once it is hot, add sliced baby onions along with carrots. Sprinkle salt and pepper. Cook until the carrots are softened and onions lightly caramelised. It should take about 5 minutes.</li><li>To prepare the fish for baking, preheat the oven to 200 degrees C. On a baking tray, layer parchment paper and place one fish fillet right in the centre. Rub the cilantro paste and top it with the cooked veggies. Finally, sprinkle some capers, fold the parchment paper like an envelope and pinch the side tightly. Repeat the process with the second fish fillet.</li><li>Bake the packets for 15 minutes.</li><li>Serve warm.</li>
