Carrot Peel Pesto Dip
INGREDIENTS :
- Carrot peel, 75 gms
- Garlic, 4 cloves
- Olive oil, 50ml
- Parmesan cheese, 30 gms, grated
- Salt, to taste
- Crushed black pepper, to taste
- Walnuts, 5 gms, washed & soaked
- Cashews,45 gms, washed & soaked
- Chopped carrots, coriander & melon seeds, for garnish
METHOD :
- Wash the carrot peel thoroughly
- Put all the ingredients in a blender and blitz until smooth
- Garnish with chopped carrots, coriander and melon seeds
