Carrot Peel Pesto Dip

INGREDIENTS :

  • Carrot peel, 75 gms
  • Garlic, 4 cloves
  • Olive oil, 50ml
  • Parmesan cheese, 30 gms, grated
  • Salt, to taste
  • Crushed black pepper, to taste
  • Walnuts, 5 gms, washed & soaked
  • Cashews,45 gms, washed & soaked
  • Chopped carrots, coriander & melon seeds, for garnish

METHOD :

  1. Wash the carrot peel thoroughly
  2. Put all the ingredients in a blender and blitz until smooth
  3. Garnish with chopped carrots, coriander and melon seeds
