LOADED UPVAS SWEET POTATO

INGREDIENTS :

  • Sweet potatoes, 4 large
  • Potato, 1
  • Pomegranate seeds, ¼ cup
  • Puffed amaranth, ¼ cup
  • Honey, 1 tbsp
  • Oil/coconut oil, 2 tbsp
  • Cinnamon, 1 tbsp
  • Coriander,, 2 tbsp finely chopped
  • Ginger, 1 tsp, finely chopped
  • Roasted peanuts, ½ cup
  • Salt, to taste
  • Flax seeds, 1 tsp
  • Red chilli powder, ½ tsp
  • Chat masala, ½ tsp (optional)
  • Black pepper, ½ tsp
  • Lemon juice, 1 tbsp
  • Salt, to taste

METHOD :

  1. Heat oven to 400.
  2. Poke half the sweet potatoes with a fork. Cover with aluminum foil and bake for 30-40 minutes or until fork-tender. Unwrap and let cool.
  3. Cut potatoes in half lengthwise and scoop out the insides into a bowl, leaving 1/4 inch rim of potato in the skin. Mash the potato insides with a spoon. Set it aside.
  4. Peel and cut the potato and the remaining sweet potato into cubes. Toss it in salt, pepper and oil. Place it on a greased baking tray and bake for 30-40 minutes or until tender.
  5. Toss all the ingredients in a large bowl. Adjust the seasoning. Place it in the prepared sweet potato skins. Serve.
