LOADED UPVAS SWEET POTATO
INGREDIENTS :
- Sweet potatoes, 4 large
- Potato, 1
- Pomegranate seeds, ¼ cup
- Puffed amaranth, ¼ cup
- Honey, 1 tbsp
- Oil/coconut oil, 2 tbsp
- Cinnamon, 1 tbsp
- Coriander,, 2 tbsp finely chopped
- Ginger, 1 tsp, finely chopped
- Roasted peanuts, ½ cup
- Salt, to taste
- Flax seeds, 1 tsp
- Red chilli powder, ½ tsp
- Chat masala, ½ tsp (optional)
- Black pepper, ½ tsp
- Lemon juice, 1 tbsp
- Salt, to taste
METHOD :
- Heat oven to 400.
- Poke half the sweet potatoes with a fork. Cover with aluminum foil and bake for 30-40 minutes or until fork-tender. Unwrap and let cool.
- Cut potatoes in half lengthwise and scoop out the insides into a bowl, leaving 1/4 inch rim of potato in the skin. Mash the potato insides with a spoon. Set it aside.
- Peel and cut the potato and the remaining sweet potato into cubes. Toss it in salt, pepper and oil. Place it on a greased baking tray and bake for 30-40 minutes or until tender.
- Toss all the ingredients in a large bowl. Adjust the seasoning. Place it in the prepared sweet potato skins. Serve.
