Pineapple Sponge Cupcakes by Chef Sameera of Spoonfuls Of Happyness | Recipe

INGREDIENTS :


Dry Ingredients:

  • All-purpose Flour / Maida, 130g
  • Baking Powder, 1 tsp
  • Baking Soda, 1/4 tsp

Other Ingredients:

  • Salted Butter, 60g
  • Sprite, 60ml
  • Condensed Milk, 200ml
  • Pineapple Essence, 1 tsp
  • Yellow Gel Colour

METHOD :

  • Using a hand blender/whisk, whip the salted butter, pineapple essence, gel colour, and condensed milk until combined well.
  • Sift all the dry ingredients to remove any lumps.
  • Add the dry ingredients little by little, along with the Sprite, to the mixture and mix well using a hand blender or whisk.
  • Bake in a preheated oven at 180°C for about 15-25 minutes depending on the size of your cupcake.
  • Top it up with some whipped cream or butter cream.
