Pineapple Sponge Cupcakes by Chef Sameera of Spoonfuls Of Happyness | Recipe
INGREDIENTS :
Dry Ingredients:
- All-purpose Flour / Maida, 130g
- Baking Powder, 1 tsp
- Baking Soda, 1/4 tsp
Other Ingredients:
- Salted Butter, 60g
- Sprite, 60ml
- Condensed Milk, 200ml
- Pineapple Essence, 1 tsp
- Yellow Gel Colour
METHOD :
- Using a hand blender/whisk, whip the salted butter, pineapple essence, gel colour, and condensed milk until combined well.
- Sift all the dry ingredients to remove any lumps.
- Add the dry ingredients little by little, along with the Sprite, to the mixture and mix well using a hand blender or whisk.
- Bake in a preheated oven at 180°C for about 15-25 minutes depending on the size of your cupcake.
- Top it up with some whipped cream or butter cream.
