Red Velvet Cheesecake Cookies
INGREDIENTS :
To make the cookie dough:
- Flour, 185 g
- Cocoa powder, 26g
- Baking Soda, 5g
- Salt, 1/4 tsp
- Unsalted butter, 115g
- Brown Sugar, 100 g
- Castor sugar, 50g
- Egg, 1
- Milk, 15ml
- Vanilla extract, 10g
- Red food colouring, 15g
For the cream cheese filling:
- Cream cheese, 120g
- Icing sugar, 170g
- Flour, 15g
- Vanilla extract, ½ tsp
METHOD :
- Whisk the flour, cocoa powder, baking soda, and salt together until combined. Set aside
- In a mixer, cream butter, caster sugar, brown sugar until combined
- Add in the eggs, milk and vanilla together and mix well
- Fold in the flour, baking powder, salt, and cocoa powder
- Add the food colour, as required
- Refrigerate the dough for 30 minutes
- In a mixer, add the cream cheese, sugar, flour, vanilla and mix till it is smooth and creamy
- Put the mixture in a silicone mould and freeze it for an hour
- Make 85g roundels of the cookie dough and place one cream cheese filling and make roundel
- Bake at 177 ºC for 12-13 minutes or until edges appear set
