Red Velvet Cheesecake Cookies


To make the cookie dough:

  • Flour, 185 g
  • Cocoa powder, 26g
  • Baking Soda, 5g
  • Salt, 1/4 tsp
  • Unsalted butter, 115g
  • Brown Sugar, 100 g
  • Castor sugar, 50g
  • Egg, 1
  • Milk, 15ml
  • Vanilla extract, 10g
  • Red food colouring, 15g

For the cream cheese filling:

  • Cream cheese, 120g
  • Icing sugar, 170g
  • Flour, 15g
  • Vanilla extract, ½ tsp



  1. Whisk the flour, cocoa powder, baking soda, and salt together until combined. Set aside
  2. In a mixer, cream butter, caster sugar, brown sugar until combined
  3. Add in the eggs, milk and vanilla together and mix well
  4. Fold in the flour, baking powder, salt, and cocoa powder
  5. Add the food colour, as required
  6. Refrigerate the dough for 30 minutes
  7. In a mixer, add the cream cheese, sugar, flour, vanilla and mix till it is smooth and creamy
  8. Put the mixture in a silicone mould and freeze it for an hour
  9. Make 85g roundels of the cookie dough and place one cream cheese filling and make roundel
  10. Bake at 177 ºC for 12-13 minutes or until edges appear set
