Serves 4-6
Preparation Time – 15mins
Cooking Time – 20min
Resting time – 2 hours

Ingredients –
• Refined flour/maida – 2 cups
• Baking soda – ¼ tsp
• Baking powder – 1 tsp
• Salt – ¾ tsp
• Oil – 2 tbsp
• Curd/yoghurt – ¼ cup
• Garlic – 1 tsp, minced
• Water, for kneading
• Garlic infused Ghee – 3 tbsp
• Blue Cheese – 100g, for stuffing
• Black sesame seeds – 2 tsp

Method –
1) In a large mixing bowl, add refined flour, baking soda, baking powder and salt. To this mixture, add oil, curd and 1 tsp garlic, mix well making sure everything is well combined

2) Now, add water as required and knead until a smooth and soft dough is formed. Grease the dough with little oil, cover and allow it to rest for 2 hours

3) Meanwhile, melt the garlic infused ghee and keep it aside

4) After 2 hours, knead the dough to release any air pockets present in it. Make small roundels of equal size to make the naan

5) Stuff each portion roundel with blue cheese and gently roll into an oval shape using a rolling pin, uniformly coat with water on one side of the naan

6) Slowly flip the rolled naan onto a hot griddle/pan. (Remember to be gentle and put the water-coated side down first)

7) Lightly press, this helps the naan to stick on to the griddle. Dip your finger in water and sprinkle with black sesame seeds on top. Now after a minute, flip the griddle upside down and cook the naan directly on flame, until it turns golden brown

8) Brush the top of the naan with garlic infused ghee. Gently scrape it from the griddle and serve hot with your favourite curry
