Cucumber Gazpacho Recipe
A spanish specialty, gazpacho is a cold soup served with a side of french sourdough or crostini.
Cook Time: 15-20 minutes
2 cucumbers, peeled & roughly chopped
2 garlic cloves
1 fresh jalapeno
2 tbsp sour cream
Salt & sugar to taste
Handful of fresh coriander leaves
Zest and juice of half a lemon
- Blend all the ingredients – cucumber, coriander, lemon juice, lemon zest, garlic, jalapeno and sour cream in a blender jar to a smooth consistency.
- Chill before serving. Garnish with coriander, micro greens and edible flowers.
