While we do love buttermilk pancakes, the type that really tugs at our heartstrings are Japanese pancakes, a.k.a okonomiyaki.

Okonomi means “how you want it” and this speciality from Osaka has been adapted many fold as the dish travelled across continents. It’s a comfort food, which strikes a great balance of savoury, sweet, smoky flavours.
