Garlic & Herb Roasted Potatoes Recipe

Ingredients:
• Potatoes – 4, large
• Olive oil – 1 tbsp
• Garlic – 2 cloves, minced
• Salt – 1 tsp
• Rosemary – 1 tsp
• Oregano – ½ tsp
• Thyme – ½ tsp
• Black pepper – ½ tsp
• Garlic infused Ghee – 3 tsp

Method:
1) Preheat the oven to 205 degrees C

2) Scrub the potatoes with skin on until clean. Cut it into half, lengthwise. Further, cut each half into 3-4 wedges, as required

3) Place the wedges in a bowl, drizzle with olive oil and all remaining herbs and flavourings. Toss well to evenly coat the potato wedges

4) Spread the coated potato wedges onto a large baking sheet. Bake for 30-35 minutes, or until lightly browned and crispy, turning them over on their other side with a spatula after 20 minutes

5) Once cooked and out of the oven, brush then with garlic infused ghee and serve immediately
