Kale & Bean Burger Recipe

The world is going crazy about kale so Mira Manek spices things up with a Kale & Bean Burger.

Serves: 2-3 people


For the burger patties
2 tbsp coconut oil
2 onions, chopped
2 cloves garlic, grated
¼ tsp turmeric
60g kale, very finely chopped
230g (1 tin) black beans/ kidney beans, 130g sweet potato
½ tsp Himalayan salt
½ tsp paprika
½ curry powder, optional
½ tsp black pepper
1 tbsp corn flour

For the side of sweet potato wedges
1(200g) large sweet potato 
2 tbsp coconut or rapeseed oil
¼ tsp paprika
¼ tsp turmeric
¼ tsp salt

For the homemade healthy chipotle sauce
1 tbsp tahini
5 tbsp yoghurt
2 tbsp balsamic vinegar
¼ tsp salt
2 tsps paprika
½ tsp mustard
Handful coriander leaves, chopped
1 tsp tomato puree
Squeeze of lime


  1. Start by removing the skin of the sweet potato and steaming the sweet potato for 10-15 minutes.
  2. Add chopped onions to a large pan with a little oil on low heat. Let the onions cook for a few minutes until slightly brown, add the grated or chopped garlic, then stir in the turmeric. You can now add the kale, stir together for a couple of minutes before adding the black beans, using a fork to mash them a little before placing in the pan.
  3. The sweet potato should now be steamed. If not completely cooked and soft, leave for longer. Now mash the sweet potato flesh before placing into the pan and mixing in. Add the salt, curry powder, paprika and black pepper and stir thoroughly.
  4. Let the mixture cool a little for a few minutes so you can form the patties with your hands. Heat 1 tsp of oil on a flat-based pan on low heat, sprinkle a little cornflour on both sides of the burger patties and place the patties on the pan.
  5. Let these cook for 5-7 minutes, turning them every 30 seconds or so. If the pan is small cook two patties together so there is enough space to flip them.

For sweet potato fries

  1. Slice the sweet potato into wedges without removing the skin. Mix all the ingredients for the sweet potato together in a mixing bowl and place under the grill for around 10-15 minutes, checking and turning the wedges every few minutes, careful they don’t burn.


  1. Mix together all the ingredients for the sauce and serve the patties on a bun with the sauce and sweet potatoes.
