Mexican Cherry Chipotle Salsa Recipe

Serves: 3-4 people


2 cups cherries, halved and pitted
¼ cup onion, finely chopped
1 clove garlic
¼ cup fresh coriander, chopped
1 or 2 chipotle chilli
3 tbsp lime juice
Salt to taste


  1. Place garlic in a food processor and pulse a few times to finely chop.
  2. Add half of the cherries, onions, fresh coriander, chipotle chilli, lime juice and process till finely chopped.
  3. Add rest of the cherries and pulse a few times till they are coarsely chopped. Add salt to taste.
