A Manchego-style cheese made from a blend of cow, goat, and sheep milk in Castilla y Leon, Bonvallis's Iberico Cheese is one of the most popular cheeses in Spain, which is semi-cured for around two months. It flaunts a natural, brown, or black rind since it is made in a similar kind of mould as the Manchego and thus also has the same hatched pattern imprinted into its rind. In terms of taste, it boasts herby, grassy flavours from the goat and ewe milk and a smooth texture from the cow's milk, and is mild and buttery on the palate.
