Sheera Recipe

For roasting:
• Ghee/clarified butter – 2 tbsp
• Broken cashew, a handful
• Raisin – 2 tbsp
• Semolina/suji/rawa – ½ cup

Other ingredients:
• Water – 2 ½ cups
• Sugar – ½ cup
• Saffron infused ghee – ¼ cup
• Few strands of saffron
• Cardamom powder – ½ tsp

1) In a pan, add 2 tbsp ghee and fry the cashew & raisins on low flame. Once it’s golden brown, strain and keep it aside

2) In the remaining ghee, add the semolina and roast on low flame, until the semolina turns light brown

3) In a saucepan, boil water with few strands of saffron and add it to the roasted semolina, stirring continuously. Cook until the semolina absorbs all the water and turns into a lump-free mixture

4) Add sugar and continue to stir

5) Mix well to make sure everything is well combined

6) Drizzle saffron ghee on top and cover the mixture with a tight lid for 5 minutes, making sure semolina is cooked completely

7) Garnish with roasted cashews, raisins and ½ tsp cardamom powder
