But when you think of a classic saucy side dish which combines colour, flavour, texture, fibre and the lot really, there is one dish that instantly springs to mind… ratatouille, the delicious French classic that is often seen alongside a host of other dishes such as roasts, grilled foods, bakes, pies etc. It’s even used as a filler in crepes and tarts or in an omelette! 

This hearty, comforting dish originates from Provence and Nice in France. While it was originally a meal made by farmers, today the dish has made its way to the menu in leading restaurants all over the world. It was even the inspiration for the classic Disney film Ratatouille, which features Rémy an aspiring rat who tries his luck at becoming a chef in the city and wins over the most hardened of restaurant critics with his beautifully made ratatouille!

Ratatouille is really summer in a dish. It brings together a basket of fresh, plump, vibrant vegetables like red and yellow capsicum, juicy eggplants and crunchy zucchini that are married together in a stew-like tomato based sauce, imbibing the flavours of onions, garlic and herbs to give it that fresh sunny Provencal flavour.
