Thai Vegetable Curry Recipe


We love the coconutty Thai vegetable curry for its distinctive yet delicious flavour. Here is a recipe that the chef from The Pune Marriott.

Serves: 4 people

INGREDIENTS


<li>Stir the green curry paste in oil over medium heat in a pan until fragrant, then reduce the heat and add little coconut milk, a little at a time. Stir until a green oil surfaces.</li><li>Add all vegetables and continue cooking for 10 minutes on medium heat until cooked. Add the remaining coconut milk and season with palm sugar, salt, light soy sauce.</li><li>Cook until vegetables are done, sprinkle basil leaves and red chilli over, and then turn off the heat.<br />
Serve curry with steamed rice.</li>

METHOD
