Thandai Spiced Chia Pudding Recipe

A healthy pudding made with assorted nuts and chia seeds, perfect for the occasion of Holi.

Almonds; 2 tbsp.

Cashews; 1 tbsp.

Pistachios; 1 tbsp.

Poppy seeds; 1 tsp.

Melon Seeds; 1 tsp.

Black pepper; 1 tsp.

Cinnamon powder; 1 tsp.

Fennel seeds; 2 tsp.

Cardamom; 3-4

Rose water; 2 tbsp.

Saffron; a pinch

Salt; a pinch

Honey; 1/4 cup

Dried rose petals; 1 tsp 

Chia seeds; 1/2 cup

Thandai spice paste; 1/2 cup

Almond milk; 2 cups

Saffron; a pinch


  1. Soak all the nuts in 1 cup of water overnight.
  2. The next day, strain the nuts and remove any skin.
  3. Blend all the dry ingredients and the nuts into a fine paste.
  4. Add the rosewater and honey to the paste and blend until combined.
  5. Soak the saffron in the milk for a few minutes.
  6. Combine the chia seeds and milk. Let the chia seeds bloom for a few minutes.
  7. Occasionally, stir the pudding over the next 30 minutes to ensure even dispersion.
  8. Mix in the Thandai paste into the chia seed pudding thoroughly.
  9. Top with nuts or fresh berries and serve chilled.
